Super Easy Peanut Butter Cookies
I came up with this peanut butter cookie recipe on a lazy Sunday when I had no plans of doing anything but laying in my bed and watching reruns of Law and Order: SVU. It’s amazing when you can come up with something magical, isn’t it?! Anyway, I’m sure I’ve said this before, but these cookies are probably one of the best things I’ve ever come up with. They’re nothing super original, but dang they just turned out sooooo good. If you like peanut butter – these cookies will be your jam.
Here’s what you’ll need:
1 cup natural peanut butter (I like JIF)
1 cup Organic Wholesome Coconut Palm Sugar
1 tsp vanilla
¼ cup whole wheat flour
So, I didn’t want to include the flour, but things got a little sticky (literally) without it. You could probably make them without it, but adding just a touch really helped me out.
Scoop out your peanut butter into a medium size mixing bowl and add sugar, egg and vanilla. Mix everything up until you’ve got a nice, sticky dough. If you’re feeling it’s a little too sticky, that’s where the flour comes in. I used whole wheat flour and added one spoonful at a time because I wanted to keep it minimal. Once I got to a consistency I liked and was a little easier to work with, I formed little balls and lined them on a greased cookie sheet.
To stick with true peanut butter cookie style, I took a fork and made the iconic patchwork looking marks (I just realized I have no idea what those makes are actually called? If you know, please feel free to school me in the comments).
Heat your oven to 350 degrees, put the cookies in for approximately 10 minutes and oh my goodness, these cookies came out of the oven so incredibly chewy. Like, the chewiest cookies I’ve ever had and in the best way possible.
I should also mention you can have these peanut butter cookies whipped up in about 20 minutes flat — from mixing ingredients to cooling on the rack — they’re super-fast and easy.
