Banana Cream Pie Cups for Easter Dessert
I am a lover of banana cream pie. For those of you that don’t know, my parents owned a restaurant all throughout my childhood, and one of its most popular dessert options was the traditional banana cream pie. I ate it all the time and never got sick of it. So, a few years ago when I was searching for banana cream pie recipes, I came across something similar to what I’m going to share with you today. It’s not a traditional pie, but more of a banana cream casserole of sorts. It’s fabulous, so I’ll just get on with it.
I usually make this recipe in a 15x10 inch pan, but since I wanted to put an Easter spin on it this time, I decided to make individual portions in clear plastic cups.
Here’s what you’ll need:
1 8 oz container Cool Whip
1 14 oz can sweetened condensed milk
6 ripe bananas
1 box mini Nilla Wafers
1 5 oz box vanilla or French vanilla instant pudding mix
2 cups milk

Open your box of instant pudding and whisk together the milk and powdered mix. CAUTION – the box of instant pudding will say use three cups of milk, but because you’re going to add the can of sweetened condensed milk, you only want to use two cups of milk. I did not do this, so my pudding filling was a bit runny. Trust me, the taste will still be there if you make this mistake too, but I just wanted to call this out.
Now back on track.
After you mix the pudding powder and the milk, put it in the fridge to set for just a minute. While it’s setting, you can peel your bananas and slice them. After about three or so minutes, pull the pudding out of the fridge and mix in the Cool Whip and sweetened condensed milk. Your filling is done!
Next, open your box of mini Nilla Wafers and fill the bottom of your plastic cups. Then pile about four or five banana slices and last, add a few spoonfuls of your pudding. Repeat.
After you have your two layers, that’s when you’ll make your little Peep chick nest with Cadbury eggs.
You’re done! Make as many as you need. This amount of ingredients should make around 20+ cups for your Easter day festivities!
The best part is you can make this anytime of the year if you minus the Peeps and Cadbury eggs. Trust me when I say you’ll probably want to make it again!
