Healthy No-Bake Cookies
I’m so excited about this recipe. I developed it myself and I’ve made it four times in the last week. It’s super quick and, you guys, these cookies taste EXACTLY like the unhealthy version usually filled with butter and refined sugar. If you’re someone who thinks that healthy desserts tend to taste “healthy”, I beg you — try these no-bakes.
I always loved chowing down on massive no-bake cookies when I was kid because my dad’s restaurant had them on hand almost every day. Well, now grown up Chloe needs a way to still chow down without getting a stomach ache and gaining a few lbs. This recipe is the solution.
Here’s what you’ll need:
3 cups 100% whole grain quick oats
¾ cup Wholesome Organic Coconut Palm Sugar
1 cup natural peanut butter (no hydrogenated oils, I use JIF natural creamy)
1 tbs vanilla
4 tbs unsweetened cocoa
½ cup organic LouAna coconut oil
½ cup milk
I linked to the Wholesome organic coconut palm sugar because I LOVE this sugar. It has changed how I bake, so you should definitely look into it. Because I’ve started using it so much, I’ve had to do a little research. I had never even heard of coconut sugar before, but I can tell you it resembles brown sugar and can have the same kind of taste. To get it to taste more like regular sugar, I read it’s best to mix it in with the fat (coconut oil in this case) of your recipe and let it sit for a few minutes. So, that’s step one.
Melt your coconut oil and then mix in the coconut sugar. Whisk them together and just let them hang out for a few minutes. Add in your half cup of milk, vanilla, peanut butter and stir. Once mixed, add your unsweetened cocoa. Everything should be nice and chocolatey and peanut buttery at this point. Add your oats and continue to mix.
Once everything is completely blended all you need to do is spoon your cookies onto a pan with a piece of parchment paper on it. Put in the fridge and let set. If you’re pressed for time, a few hours will do, but I prefer overnight. I recommend storing these in the fridge because the coconut oil makes them pretty melty.
That’s it! These will be your new favorite go-to. Other than how good they taste and how healthy they are, the best part is how fast you can whip these up. It takes maybe 10 minutes to mix everything up. Enjoy your new favorite cookie! ;)
