Jalapeno and Avocado Chicken Burgers
Before I get to the delicious part of this story, I just want to say I had never worked with ground chicken before. It was very mushy and kind of gross; so don’t let that stop you if half way through making these burgers you’re a little put off by the texture.
I absolutely love avocado, I would bathe in avocado if I could. So, anything with avocado in it I have to try.
Here’s what you’ll need:
1 lb ground chicken
1 medium to large ripe avocado
1 piece of bread
Salt and pepper to taste
To form the burgers, halve the avocado and remove the pit. Using a knife, score the avocado into cubes and then scoop out into a medium mixing bowl. Dice the jalapeno into small pieces. I did not remove the seeds so the burgers would have a little zip. Add the jalapeno to the mixing bowl. Last, add the thawed pound of ground chicken. Dash some salt and some pepper. Now, get in there with your hands and mix it all up.
This is where the bread comes in. Because the chicken is so loosey goosey, you’ll need the bread to hold the burgers together. Using a blender or a food processor, turn the bread into crumbs and mix it in with the ground chicken, avocado and jalapeno.
I went for a slider size burger, which allowed me to make seven patties. I put them on a hot grill pan on the stove for about 15 to 20 minutes. Because I made these a few days before Thanksgiving, I had some delicious King’s Hawaiian Sweet Rolls and used them as buns. Those rolls are just to die for and they were the perfect size for a slider.
