Chicken Avocado Pizza
This recipe is a perfect example of something so simple, but incredibly delicious. I’m once again using my go-to for at home, easy pizza crust, Mama Mary’s. So good and crispy! I’ll just get straight to it.
Here’s what you’ll need:
1 Mama Mary’s 100% whole wheat pizza crust
1 large avocado (or two if you really want to pile it on!)
2 skinless, boneless chicken breasts
2 cups cheese (any blend)
2 cups spinach
1 tbs olive oil
Preheat your oven to 450 degrees. While that’s happening, spread your olive oil over the pizza crust. Next, load on one cup of cheese, followed by your spinach and the chicken, which will need to be cooked prior to putting it on the pizza crust. I simply baked mine in the oven with some olive oil, salt and pepper and then sliced it.
After you’ve got everything layered on, put on your second cup of cheese. Your oven should be preheated by now, so pop the pizza directly on to the oven rack so the crust can get nice and crispy. Let it cook for about 8 minutes.
While the pizza is cooking, slice up an avocado so it’s ready to just toss on top.
Pull your pizza out on to a pan and top off with your avocado. Now you have quietly possibly the world’s best chicken and avocado pizza.
