It was Friday night and Trevor and I wanted to eat somewhere we haven’t eaten before. I’d heard a lot about SchillingBridge Cork and Tap House in Fallbrook, but somehow I had never made it there yet. Well thank goodness we finally did because I found some incredible food and even better wine. It was so good we went back for lunch and some day drinking on Saturday (I’m not even kidding).

When we got there the entire place was packed, but the hostess was super friendly and told us we could grab a drink at the bar while waited. So, that’s what we did and then checked out the menu. Right when we decided on what we wanted to order it was time to be seated. If you’re planning on going on Friday or Saturday evening, I would expect a little bit of wait, but with the bar right there, it’s not bad at all.

Unfortunately I didn’t get to snap any pictures of my food (because I ate it too fast, it was that good), but I’ll tell you that on Friday night I had the pesto chicken sandwich and Trevor had the smoked brisket sandwich. We both loved our choices. I was trying to pick something a little healthier, so a chicken sandwich with fresh spinach was a great choice. I got the mayonnaise pesto on the side so I could use as little or as much I wanted.

Saturday when we went back for lunch and drinks with friends, Trevor and I split the 12” popeye pizza. We added chicken for a little more protein and ooohhh myyyy goodnessss. I absolutely loved it. The pizza is normally made with spinach artichoke dip piled with caramelized onion, fresh spinach and mozzarella. It was absolutely delicious. I’d go back and eat it again in a heartbeat.

My favorite part of Saturday though was trying some of the SchillingBridge wine. I like a sweeter red, so I went for the “Hot Flash Red.” Don’t be fooled by the name (for some reason I thought it would taste like a hot tamale lol), this is a great red wine that isn’t dry at all. If you’re new to wine, this would definitely be the wine I would choose to introduce you to reds.

I loved the wine so much I bought a bottle and took it home for a girl’s night, where I also finally grabbed some pictures.

As I get to know Lincoln a little bit more and try new shops and restaurants, I’m so glad for finds like SchillingBridge Cork and Tap House that I can genuinely say was so, so good!
